Tante Marie Masters - Alice Medrich

We had a series of guest pastry chefs come into Tante Marie and show us their specialties. Inspired by Top Chef Masters, I'll call this series Tante Marie Masters.


Alice Medrich is truly amazing -- she is a chocolate goddess. She's written many of her own books, contributed to cook books, and helped to shape the way we experience chocolate. Many companies will change their products simply based on a suggestion from Alice Medrich. When it comes to chocolate, she knows her stuff.


We watched in awe as she created countless desserts in just 3 hours, talking all the while about her career in chocolate work and demonstrating specific techniques. Just trying to recreate one of her cakes took us an entire class period.

The fans are stunning. And like many cake decorations, much harder than it looks to do correctly. I killed my hands just trying to get a few decent fans!


Seriously intense....but seriously delicious.
