I Do!! - Wedding Cakes


Wedding cakes on parade!! This was an exciting day for me -- making specialty cakes is pretty much THE reason I went to pastry school. We baked earlier in the week, then torted, filled, frosted and froze our cakes. We also made gumpaste flowers earlier in the week. Since this was a large project, we worked in teams.






Vikki and I decided on a white cake with purple accents. The cake looks glossy because it is actually wet. Since the cakes had been frozen, they started to defrost, causing the fondant to sweat. Lesson learned: don't cover a frozen cake with fondant!

We thought about going down to City Hall with all of our cakes and selling them to some newly married couples, but we ate them ourselves instead!
