From Cookies to Croquembouche

Croquembouche -- a classic French celebration "cake". If you've never seen one, they look quite strange. If you have seen one, they still look kind of strange. There are a few different ways to construct the tower of profiteroles...we used styrofoam cones wrapped in foil and glued the profiteroles to one another with hot caramel. The croquembouche is then decorated with sugar, nougatine, and/or jordan almonds.


So, now I've made a croquembouche. And while I am glad to be able to say that, I am not rushing out to make another any time soon!
